Giving every mise en place task a name

Assigning prep to a named cook, and recording who completed it, helps head chefs see preparation progress section by section.

A prep list tells the kitchen what needs to be ready. It rarely says who is responsible for each item, which is where tasks are missed or prepared twice.

Assign before service

When the head chef assigns a task — the pea soup to one cook, the dressings to another — responsibility is clear before the shift begins. With UK kitchens operating under sustained staffing pressure, clear allocation matters more when teams change from day to day.

Record completion separately

The person assigned a task is not always the person who completes it. Recording both keeps an accurate picture of how work was actually shared.

See progress in real time

A shared list updated as tasks are completed lets the head chef see which sections are ready without walking the line to ask.
